Portuguese Vegetable Soup
1-1/2 T olive oil
1/2 c chopped onion
1 clove garlic, minced
1 lb kielbasa, cut bite-size
2-1/2 c diced potatoes
5 c real chicken stock
28-oz can tomatoes, chopped
16 oz kidney beans, undrained
1/4 lb kale
3/4 tsp pepper
2 tsp salt
Add oil, onions & garlic to a large soup pot. Saute onions until tender. Add all other ingredients, except kale. Bring to a boil & simmer until potatoes are tender. Tear kale into pieces & add to the soup. Simmer for 10 minutes more. Garnish with parsley.
Makes 10 cups.
1 tsp extra virgin olive oil
1/4 c chopped sweet onion
1 c canned solid pack pumpkin
1 med tomato, chopped & seeded
1/4 c low-fat, low-sodium chicken broth
1/4 tsp salt, opt
1/4 tsp pepper
1/2 c evaporated skim milk, warmed
Heat oil in small saucepan over medium-high heat. When oil is moderately hot, add onion & saute until tender. Add pumpkin, tomato, broth, salt & pepper. Cover & cook for 8-10 minutes, stirring frequently to blend the mixture. Remove the saucepan from heat. Carefully spoon the hot mixture into a blender & puree until smooth. Gradually add milk & blend again. Reheat, sprinkle with nutmeg & serve.
