From Foreword:

After 15 years of catering and tearoom service to the great American public, I conceived the idea of writing this Salad Bowl.

Women of today realize the importance of salads on their menus. Most epicures will tell you that the most important thing about salad is the dressing and, while there are many very good dressings on the market, most women and men who toss their salads and pride themselves on their cookery, like to mix their own.

Here are formulae for all types of dressings; viz., Russian, French, Chiffonade, Avocado and many others too delicious to talk about until you try them.

As for the salads themselves, I advise you to make them tasty and arrange them attractively, as eye appeal is of paramount importance.

I am happy to give these formulae to the American housewife. So many people have eaten my salads and enjoyed them throughout the years that it gives me real pleasure to hand them on so that they may be enjoyed by many more.

Condition: Very Good. Only minimal wear to covers edge from storing and small spotting. Lightly age-toned pages. A newspaper clipping of a Lemon Juice recipe, combined with Ru-Ex Compound, to relieve rheumatic arthritis, is bookmarked between page 48 and 49, and the shadow from the clipping is on both pages. Little to no wear of book.


ART OF SALAD MAKING CONTENTS:

In addition to the menus and salad/dressing recipes, the author also explains the difference between greens … at last the reader is told exactly what Bibb Lettuce is, Leaf Lettuce and Curly Endive, to name only a few. Not a typical salad book!
