Quoted From Foreword by Larry Ellman, The Cattleman Restaurant:

It is significant to me that in our society of ever changing tastes, styles, and fads certain areas of life remain constant throughout the years. America’s fondness for things Western is something that passes naturally from one generation to the next. Western music, literature, movies, fashions, and food never change yet they never seem to lose their broad appeal.

As proprietor of The Cattleman, a New York City restaurant with a Western motif, I am in a unique position to observe this phenomenon. The Cattleman, recapturing the charm and manly elegance of a plush San Francisco saloon or hotel at the turn of the century, has become one of the nation’s most successful restaurants. Naturally, beef is its specialty, and it grills one thousand steaks a day, each prepared and served with a distinctive Western touch.

A beef dish can be as subtle or as simple as the palate demands. For this beef cookbook, The Cattleman and Carol Truax have collaborated on some of their choicest recipes. These recipes are shared with you in the hope that you will enjoy The Cattleman’s brand of hearty, Western dining.
