In addition, suggestions are offered for roasting chicken and for several different dressings to accompany it; for dishes made with chicken livers; and for various kinds of dumplings that may be served as part of a casserole dish.

The chicken recipes have been chosen for their variety:  some are familiar, others exotic; some are light, others substantial; some are elegant, others plain.  These dishes are all the more attractive because chicken is among the least expensive meats on the market.
